Why This Dish Heals

Recipe – Steamed Kale with Caramelized Onions, Beets & a Healing Kick
Ingredients:
1 bunch organic kale (chopped)
1 small red or golden beet (diced)
1 small onion (sliced thin)
2–3 cloves garlic (optional)
1 tbsp olive oil or ghee
Sea salt and black pepper to taste
Pinch of cayenne pepper
Juice from ½ a lemon
Splash of raw apple cider vinegar
Instructions:
1. Steam diced beets until fork-tender.
2. In a skillet, heat olive oil or ghee and sauté the onions with a pinch of salt until soft and caramelized.
3. Add garlic (if using), chopped kale, salt, black pepper, and a light sprinkle of cayenne. Sauté until kale is just wilted.
4. Add steamed beets and stir gently to blend flavors.
5. Finish with the juice of half a lemon and a splash of apple cider vinegar for brightness and digestive support.
